Aubrac is a unique region located south of the Massif Central which covers three departments (Cantal, Aveyron and Lozère). In our region, nature and heritage are preserved for all to see, it is ideal for holidays, leisure and sports activities, whatever the time of year.
Laguiole : the village A village situated in the north of the Aveyron department, its name is pronounced "Layol" and comes from the dialect of our ancestors. Contrary to the ideas conveyed by visitors to our region and the Laguiole inhabitants who went to Paris and gathered together in Auvergne communities, Laguiole was always located in Rouergue (Haute-Guyenne). It is a lively village where you can find all sorts of shops that will add to your stay.
Culinary traditions of Aubrac Among the many specialties of the region, throughout your stay you will discover the Laguiole cheese, traditionally made in burons (small barns where herds were kept), the aligot prepared with this famous cheese, and the Aubrac rétortillat. For food lovers, the fouace is a brioche flavoured with orange blossom, a specialty of the Aveyron. And to drink, why not try Aubrac tea, a beverage based on large-flowered calamint (calamintha grandiflora) or Aubrac gentian drink as an aperitif?
The knives of Laguiole
The ancestor of the current knife was called capuchadou, a rustic knife shaped like a dagger and long used by the farmers of Aubrac. Pierre CALMELS is said to have designed the first Laguiole knife in 1829, similar to a folding flick knife. After being manufactured in Thiers for a long time, Aveyron artisans resumed manufacturing the traditional knife in Laguiole in 1985. Winter sports Laguiole has a ski resort that offers various slopes for downhill skiing, sledding and new trails for snowshoeing.
Hiking and walking The plateau of Aubrac offers many trails for walking and hiking, with magnificent scenery, while its vastness gives it a sense of balance and serenity.
